Variable speed drives (VSDs) let kitchen operators tune extraction to actual load — running harder during a lunch peak, quieter during prep. When a drive fails, the system typically defaults to full speed or shuts down entirely, neither of which is efficient or sustainable. We stock drives and can swap or reconfigure control panels on site.
